Any time you use an Apple Event to open Emailer (or any program), and there are multiple copies available to the System, it will use the latest installed on. So the fact that you unstuffed an old copy, that made that old copy the latest installed. Also, if you use an alias, if you didn't specifically update the alias to point to the new version, but rather removed the old and put the new in the same location... then bringing the old back *may* cause the alias to spontaniously reconnect to the old version. >On another topic.
