It can be set. IIRC, it is in the Mail.app prefs. I'm not exactly sure why Apple put it there, other than their new motto seems to be "counter-intuitive is the way to go". After all, OS X now puts things is sometimes less than obvious places, as do many features of their iApps (I remember the days of figuring out Mac applications without ever touching a manual... I had to give up on iDVD yesterday because I didn't have time to go thru the less than helpful help file, and after 10 minutes of messing with it, I wasn't able to figure out how to get the DVD menus to work the way I wanted). Of course, this should be expected from a company that has decided all their software should look like metal, and all their hardware should look like plastic!
