And they also say the Bondi iMac (and all other tray load iMacs) can only go up to 10.3.9, but I'm running 10.4.8 on quiet a few of them without any issues.
I'm not saying that a Wallstreet can run 10.4, just that sources like MacTracker don't actually list what can be done, but rather what Apple officially says is "supported" and Apple's supported claims are based on what performs well, and not on what is actually possible.
