There are some pretty good pictures of the way a three phase motor windings are connected if you look at http://en.wikipedia.org/wiki/Y-%CE%94_transform These assume a single voltage motor. A dual voltage motor will have two coils or resistances in series on each of the three legs. Now depending upon the number of wires pulled out the ways to test individual coils will vary. Have a look at http://www.patchn.com/index.php?option=com_content&task=view&id=44&Itemid=34 and you'll see nine and twelve wire motor connections. The first thing you need to do is write down the way that the numbered wires are connected in you're motor's pecker head. That done then disconnect them and test each coil with an ohm meter. If you make a copy of the relevant motor's layout from the above link you can write in the resistance of each coil. That way you can see exactly where you are. Good luck.
