I'd make some reasonable defaults, and override them with any settings 
the user specifies.  The user doesn't have to change anything if they 
don't want to, so it's only as complex to use as the user wants to make it.

As for the possible options, there are several:
1) text position - specific position or legend across the top, left 
side, right side, or bottom or each one floating on the starting point 
of the trace, like halscope does
2) trace colors, and whether the text color matches the trace (or is set 
to some other specific color)
3) of course font and size
