There is an osc app for android, called fingerplay. I would be cautious controlling a machine via wifi, as a lost connection means that you can't control the machine. Same goes for the touchscreen: several times, I've tapped one place on the screen and the phone acted like I was tapping elsewhere.

You can see that it's a general purpose GUI. Nothing has any assigned purpose. It generally takes the form of sliders and buttons. Maybe for CNC you would also want numeric input and numeric display.
