Vishay has pretty much bought everyone that makes load cells. Tedea Huntleigh is the most well known. As far as using them in a harsh environment, the signals are differential with shielded cables. I know they work quite well up to 10 or 20V/m, but I don't have experience with them above that. I'd be interested to hear more.
