I know SWPadnos is using a touchscreen with the AXIS GUI - we worked with him to fix up a few things that required mouse buttons other than #1. I suspect jogging with a touchscreen is going to be a bit clumsy (no matter which GUI you pick - they all jog the same way) so I suggest you consider a solution using touchscreen + jogwheel and a rotary switch for jog axis selection, and maybe a few other buttons like start/stop/pause/step.
