I ran into something similar recently. Uuid's can be used for root when you
have an initrd, but not otherwise. Some script in the initrd handles the
uuid and finds the correct descriptor.

If you are new to Linux the easiest solution would be the EMC-users livecd.
Otherwise, edit grub's config file.
