At least when it comes to boat hulls, the term used is "lofting"...

There are You tube videos on doing it with Inventor and Solidworks.

I think that Violin tops are very much like boat hulls in this respect.

There was (or is?) quite a nice violin shop at the park in historic 
Williamsburg, VA.
