You must retain the router that Verizon gave you as the CE (Customer
Edge) device, otherwise you can't stream on demand video and the like.
However, you can disable its wireless port and install a WRT54G (about
half the cost of an RPi on eBay) with OpenWRT as your AP.  You probably
want to configure the WRT with a static IP address.  Then, running it in
AP mode, you simply connect one of its LAN ports via ethernet to the CE
router.
