Machine a small post that can be held in the collet, that can also hold the camera body. Machine the post so that you have a curved tab sticking down from the post, and use a hose clamp or other means to hold the camera body to the post. That way, the center of the camera would be on the center point of the Z axis, and you wouldn't have to worry about applying an offset to the center of the image. The cable wouldn't have to go into the collet, since the camera and the cable would be outside the collet.
