You need to worry rather less. But the board will have no effect at all on
latency.

As the Mesa board is only updated every 1000 uS compared to the 50uS of a
typical parallel port then the latency is a much smaller proportion of the
actual update time.
Also, I believe that the board has some degree of compensation for jitter
built in.

The same is also true for other hardware step generators, such as the Pico
cards.
