No, these use triangulation rather than time-of-flight which is how
they manage such good resolution at small ranges.

You could have one mounted rigidly relative to the grinding wheel
spindle (behind a cover). Dress the wheel, open the cover, take a
reading and have a very accurate measure of wheel diameter to use in
offsetting and grinding geometry calcs.
