If you aren't already aware of it, the Agent Modeling Platform provides 
extensive support for exactly this kind of thing: http://www.eclipse.org/amp/

Personally, I don't believe that UML has rich enough semantics to really 
capture what's needed in a declarative way. Note that the semantics of UML 
classes are actually far *weaker* than those provided by EMF, and AMP provides 
richer semantics still. AMP provides a complete behavioural model, instances of 
which could probably be mapped automatically to other types of UML artifacts.

Would love to see a football simulation in it. But I'm not sure you're ever 
going to be able to account for outliers like this:
