Once a encrypted file system has been created, the .encfs6.xml should
not change.  period!

As such something you are doing is causing the file to be modified.

The likely culprit is "cryptkeeper".

I suggest you repeat the sequence, but watch the time stamps on the
encfs config file and find out what modified it.
