What I believe is happening is that the signature is made before the text is converted to its unformatted version and line-wrapped. So, the signature is created on this email before this line gets wrapped. Then when the signature is checked again after the text has already been wrapped the new line breaks calls the signature to fail. I confirmed this by taking the failing signature and mail and removing all line breaks and then passing it through gpg. When doing this the signature is successful again.
