I just started to use a preview version of Enigmail, so it might look different, but I have a text saying "This message will be signed" above my mail composition window. I can click this (I think in the stable version there is an arrow you can click) and change options, so that it will also encrypt the message. In the new version apart from the message, I also have a lock icon, which I can click to toggle between sign/non-encrypted and sign/encrypted, but I think in the stable version it's only the text message with the arrow. Also check the mail account options under "Account settings" -> your mail account -> OpenGPG Security. there are also options to enable/disable encryption (by default). But apart from this, you should always be able to manually set it in the composition window.
