Anthony,

I usually send PGP/MIME signed HTML emails.  But, as an experiment, I
changed a setting to accomplish what you are trying to do.

I did the following:

1) In Thunderbird, I selected Tools-Account Settings-/account
name/-OpenPGP Security-then I unchecked 'Use PGP/MIME by default'
2) In Thunderbird, click on Write.  (If Thunderbird is configured to use
HTML by default, click and Shift+Write to force the use of text-only.)
3) Compose your email
4) If signing is not enabled by default, click on the icon of the pen to
force signing
5) Send the email
6) You'll be prompted to enter your Pass Phrase

You can verify your success by viewing the source of the email.
