There is a setting in the account manager that allows to control in case
of conflicts if S/MIME of OpenPGP should be used by default.

If you want to see the protocol before the message is sent, you can
enable a confirmation message in the Enigmail sending preference - it
will tell you the protocol and if the message is signed and/or encrypted.

If you want to manually change the protocol before the message is sent,
you can use the Enigmail menu in the composer window.

As soon as someone volunteers to update it. I cannot split between
development, user support (which takes a substantial amount of time,
especially after a release) and updating the documentation. I'm doing
Enigmail in my free time and I don't have the time do everything on my
own. As long as nobody picks it up, the documentation will remain
outdated. It's up to the community ...
