If you want to build the examples, you must use --enable-build-examples. The --enable-install-examples only install source files. Anyway, it was broken in 1.7.5 and nothing has changed until 1.7.6, so it's still broken. I have no idea why on 1.7.5 it creates the folder share/eio/examples (which is empty, nothing is put there), but doesn't do that on 1.7.6.
I've fixed this on the 1.7 branch, will release a 1.7.6.1 with that fixed too.
