Actually, it will make things work much better. Perl will be hapier, man will display properly, etc.

For some Reason, RH decided to adopt en_US.utf8 for some things but didn't do it to everything, I think.

Anyway, I do this on all my Red Hat boxes and they couldn't be hapier (well, if I had a girlfriend, lots of money, a good job, etc, the boxes might be hapier, I guess).
