For your first problem, simply ensure that your player is in focus, and in
full screen, and press Alt+Enter. The player should be in full screen and
cover the panel and any other windows around it.

For your second problem, Alt+Right-Click on the Gnome panel and an
enlightenment menu should appear. Under "Stacking", press "On Top" and it
will remain on top of other windows. This should have no negative effect
on the solution above either.

Also, you can choose, by Right-clicking the desktop and selecting "Window
Placement Settings" to switch off the "Dialog windows appear together with
their owner" option, which when turned off should make sure that each app
you open with the panel will appear somewhere outside of the panel, in
some free space, rather than in the top corner of the panel.
