I ended up using:
mmv -m "*.eapp" "#1.eap"
to rename all of my eap(p)s

However when I execute:
find ~/.e -name .order | xargs sed -i 's/.eapp/.eap/'
I get the following error(s)
No such file or directory OR not a regular file errors from sed.  Any
ideas?  Thanks everyone for your help!
