Hi,

I don't use chromium but maybe it has an option to be started directly in
incognito (as firefox/iceweasel does).

Otherwise, you could copy the original Chromium.desktop (that should be
in /usr/local/share/applications or something like that) and and put it in
~/.local/share/applications under the name of e.g. Chromium_incognito.desktop

Than change the Exec entry to

Exec=chromium --incognito

You might also want to change the Comment and GenericName to say that Chromium
is started in incognito.

Of course, you could change the original Chromium.desktop without copying it!
