What examples? AKAIK startx runs a Xorg session on a given display, to open several displays you would need to run several times startx with different display number, but I guess that's not what you want to do.
Are you sure you are thinking about real displays? Not xinerama screens? Not virtual desktops, i.e those listed in the pager?
