It won't reboot. If you just change the management IP of a layer 2 switch, it will continue forwarding frames.
If you do this via a remote session (e.g. ssh), this session will be disrupted and you need to establish a new one. If all available sessions are in use you will have to wait for them to time out before you can connect again.
If you change the IP address of a switched virtual interface used for routing, traffic currently using this IP will be affected. To mitigate this you can use VRRP.
Short answer: you can change IP addresses of a DFE as long as you know what you are doing. ;-)
