Or, if the message already has some categories and you just want to add the
new one:

    set theCat to the category of theContact
    copy category "Friends" to end of theCat
    set the category of theContact to theCat

If you want to make the new category the primary one (so that the contact
gets the color of that category), copy to "beginning of" instead of "end
of".
