I had this exact same problem. When Entourage overwrites the Palm it wipes
out the categories on the Palm.
What I ended up doing was deleting the Address database on the Palm (using a
Palm app called Beam Box). Then I added the categories on the Palm and did a
regular sync between Entourage and the Palm. This way Entourage won't wipe
out the categories, but there are no addresses on the Palm to add back to
Entourage.
