Only thing I know of right now is, if you are in an app and Option-Click on the desktop, you will hide the app and switch to the desktop.
I use OneClick to provide "Hide All" and other such things. You could install OSA Menu, which came with your OS, and have an AppleScript menu universally available. Then you could save a simple script in the Universal folder (see OSA Menu docs for details) that hides all apps and assign it any keyboard shortcut you wish by appending a certain coded suffix. For example, you might make "Cmd-Option-H" do Hide All, by adding the suffix "\H+O".
The Hide All script would look like this:
tell application "Finder"
activate
set apps to every process whose visible is true
repeat with anApp in apps
if name of anApp is not "Finder" then set visible of anApp to false
end repeat
end tell
