"reply" and "reply to sender" both address correctly to the "From:" mail
address provided in the message I reply to.
I wonder what might go wrong for you. Can you provide the headers of
a message that gets addressed wrong?

You are right. I'm not aware of any preference to tweak Entourages
addressing behavior for replies.
