I have been away from the computer for a while, or I'd have thanked you
earlier. I posted a message asking for help a few days ago, and imagine my
happiness when I checked back this afternoon and saw an entire thread
complete with a script. First and foremost, thanks to you and everyone who
contributed.

Now, I'm afraid I was unable to get the final version of the script to work
as intended. Better or worse, depending on your point of view, I did get a
script to work, although I don't know why what I did worked. What I have now
works for me, but I'm adding more to this message in case others find it
helpful.

Here is the script that works, which is basically yours with several lines I
whose function I didn't follow zapped out.

tell application "Microsoft Entourage" --
    set currentMessages to the current messages --
    repeat with theMsg in the currentMessages --
        my ProcessMsg(theMsg) --
    end repeat --
end tell --

on ProcessMsg(theMsg) --
    tell application "Microsoft Entourage" --
        set the category of theMsg to {category "MF/Other"} --
        move theMsg to folder "MF FWDs" of folder "MF" of folder "Inbox" --
    end tell --
end ProcessMsg --

In the script you posted, the message moved fine, and it appended the new
category, but it did not remove the junk category. However, the script above
does work. 

All I need to do is replace the junk category with a new one, which the
above script accomplishes. However, I would never have figured this out on
my own. I just removed lines that didn't work until I stumbled upon
something that does work.
