So, you don't want to use a rule because you want to look at the messages before you run this script to delete them, right? Will this work for you:
tell application "Microsoft Entourage"
set allOfEm to every message of folder "Inbox"
repeat with aMsg in allOfEm
set c to category of aMsg
if {category "Junk"} is in c then
move aMsg to folder "Deleted Items"
-- If you want to permanently delete it, add this line: delete aMsg
end if
end repeat
end tell
