Allen Watson was very kind and made one for me. It works just as I want it
to.
tell application "Microsoft Entourage"
set allOfEm to every message of folder "Inbox"
repeat with aMsg in allOfEm
set c to category of aMsg
if {category "Junk"} is in c then
move aMsg to folder "Deleted Items"
delete aMsg
end if
end repeat
