Matthew,

There is actually a button just to the right of the list of email addresses
called "Make Default" (just under "Add" and "Remove"). Select the address
you want to be default, and click the "Make Default" button. Then whenever
you send mail to that person, either using the "New Message To" button, or
even just typing their name into the To: field, that address will be used.

Tip1: When typing someone's name in the To: field, you will see a list of
matches come up as you type. If you want to send to an address that ISN'T
the default, you will see all email addresses associated with that person to
the right of their name - either navigate to it with the arrow keys, or use
the mouse to select it.

Tip2: If you have already entered a name in the To: field and tabbed away
from it, you can still choose another email address associated with that
name without having to delete and re-enter the recipient. Click the To: area
once to open the To:/Cc:/Bcc: box, then control-click on the name. If there
is more than one email address associated with that name, you will see them
all in a list. Choose the one you want, and that makes the change.
