Well, either way, rules are what you want I think. Entourage is close enough
to Outlook to probably have a similar thing,

 but try menu bar >>tools >> rules

Then  NEW >> and use the edit rule window to set how you want it to work.

all messages >> from (email address)
Then
Move message >> to trash

 that kind of thing. If you need help, let me know, I do rules for
everything.
