I don't believe you can alter the header sent time...wait, I take that back. Yes, you can; I've done it. However, it would not indicate what time zone; there is no place in the time/date for that...so it would be very misleading or confusing, I think. One alternative: insert a first line into the message body itself, similar to what the script now displays in a dialog box. That can be done.

Add the following to the script: the first line should replace the line with "display dialog" in it that shows the results; the rest gets inserted. This puts the time sent into the first lines of the message itself.

            display dialog "The time sent was" & return & dateHeader & " in the zone of " & cityInZone & return & "for msg: " & thesub buttons {"Insert in message", "Leave alone"}  default button 1
            set theAction to button returned of result
            if theAction is "Insert in message" then
                set timeLine to "The time sent was" & dateHeader & " in the zone of " & cityInZone & return
                set t to the content of theMsg
                set t to timeLine & t
                set the content of theMsg to t
