Surprise! I cured the problem with my Entourage Messages file. Here's the
technique I used, for those who encounter similar problems in the future:

I dragged each email folder in turn from the Entourage window to the Finder.
This created an "MBOX" file on the desktop for each folder, which can be
used to restore the folder in Entourage. When I got to one folder in
particular, the disk noise started, but Entourage was able to recover and
save the file in the Finder. I then deleted that folder from Entourage, and
used the MBOX file to re-import it into Entourage. I was then able to
rebuild my Entourage files using the Option-Launch technique, and now I can
back them up with Retrospect.

I may still have a bad disk, but at least Entourage is back in shape, and it
appears that I lost no data.
