Was it a reply to a quoted message, below the quoted message (like here),
but where the quote included a signature with the -- + space + return?

If so, Entourage would interpret everything below the -- to be your previous
account's signature to be replaced. You'd need to be careful when switching
accounts with unsaved message windows. Even so, did you try command-Z?

All that said, I have seen buggy stuff with switching signatures myself.
Save first, better: select - all first, to be on the safe side.
