There's a very large pdf Manual coming with Entourage X. It will have most
of this in it. I haven't studied it much (because I "know it all"  -  hah )
and am pretty busy, but you might want to read it closely and see if there's
anything still missing. There are also books published about Entourage and
Office Mac. Finally, the online Help (also improved in X), does tell you all
about control-clicking to get contextual menus which offer shortcuts and
occasionally extra features. So take up its suggestion. You can just make it
a habit to control-click everything and anything to see what pops up,
literally.
