No, you can't always hit undo. It's buggy. It doesn't always undo the delete of the message you just deleted (try deleting a series of groups of messages, then undoing). Furthermore, if you select another folder, then the undo buffer is flushed. Bad UE. Again, I'm really more concerned with consistency than I am with safety. The menu key equivalent is Command-Delete, not delete.
