Do you suppose maybe there was some sort of odd spelling character or option-space or something like that in their name which transferred to the name of the contact when doing an "Add to Address Book"? Maybe try copying and pasting the name next time? It's true: I've checked, and a plain 'default email address' seems to work most of the time. But I have had problems with it myself in some scripts, and never studied exactly where or why. In the cases where it wouldn't work, "contents of" did the trick.
