While I'm on the topic of very minor, non-life-threatening bugs, one other (again, very minor) annoyance is the behavior of signatures. Or, rather, that Entourage acts as if there is a signature when an account has signature set to "none."
For example, if I'm editing a message, and then change the sending account right before sending, Entourage inserts a line break wherever the cursor is at, in order to paste in the appropriate signature for that account. I completely understand that behavior, and think it is a GREAT feature, especially as compared to other clients that automatically put your signature at the very end of the message. Because of this, whenever I switch to an account with a signature, I always place the cursor where I want my sig to go. However, if I'm switching to an account without a signature (sig == "none"), Entourage still inserts a hard return/line break. I usually don't remember to move the cursor to the end of the message since I know that the account has no signature to insert, and it doesn't seem very intuitive to need to do so. The result is that I often get broken paragraphs wherever I was last editing, and I have to manually remove the line break.
