Now that you've set about creating such a beast, there is a very nice
FileMaker Email Archive script and DB set available. (Not that yours isn't
exactly what you want, but it might save you a few hours or more of time.)
It automates the whole process, and has a not-pretty but very functional FM
interface for replying right from FM. Even allows the creation of "folders"
for filing those messages inside FM (folders by name, not visually, but you
can show all messages in any 'folder' for pretty good organization.)
It was designed for Outlook Express Mac, but it is very easily modifiable
for Entourage (2 small changes, one in each of the applescripts.) There may
even be an newer version than the one I use.
All in all its a good set of applescript/filemaker tools for doing what you
describe.
