If that is the case, go to Mail and news Preferences, Reply and forward tab, and check the box "Reply to messages in the format in which they were sent." If you receive mail in plain text you will reply to that mail in plain text; if you receive HTML mail, you will reply in HTML. Is this what you were looking for?
