I'm not sure where the fault lies. I see "reply-to" headers for the individual Entourage list messages I receive, and I also see them if I open an individual message from a digest of another list I'm on. In the Entourage list entry in Mailing List Manager, I have the Advanced Option checked to override the list default and always reply to the list address; however, for the list I receive in digest form, I don't have that checked.
If you don't have it checked I suggest checking it, but I don't know if that will fix anything. Perhaps the Entourage list itself needs some kind of change?
