Couldn't you use an account (and Paul's nifty script, the original name of which I've managed to forget, could it be Mailing list X or something like that?, because the ones I have are renamed by the account names :-)) to do this. Have the account set up with the From and Reply-To and .sig as you want them and then run the script to change the account whenever the recipient is one of the ones you want?
