The signature will change to the one associated with the account you just chose. If that account has no default sig then the sig will be removed from the message. There is a separate bug that can cause parts of your newly typed message to disappear when you change sig/account, but only if you have (inadvertently) edited the sig part of the message. This can sometimes happen when you position the cursor at the start of the sig separator and start typing.
