No, you can't use the header for this, it applies to message headers used to impart information about the message as it passes through the internet. You can see these headers by selecting 'Internet Headers' from the view menu with an incoming message selected. You can do what you want by creating a new signature with the default text you want, then in the account options for those particular accounts, select that signature as the default.
