There is a script which installs with OS 10.2, in the ScriptMenu.menu folder, and on the toolbar. The script imports addresses from several different sources, including Entourage and Outlook Express, into AB. I found it last night after installing 10.2 on my iBook, and it ran fine. However, not all fields are imported, including several that I find useful. Perhaps AB can be modified, at some point, to accept more fields? I haven’t had time to explore the “new” apps in 10.2, so I don’t know yet what can and cannot be done.
It's supposed to put the fields it doesn't have itself (there are an awful lot of these), properly labeled, into the contact notes. Doesn't it? i wouldn't count on any of those fields being added at any time as real AB fields, if I were you. It's not as full-featured as Entourage by a long way. But useable, yes. Also it seems to label your custom fields as 'custom field 1", etc. in the notes, even if you've given names to your custom fields. I would plan to improve on that.
However, the script also seems to have several flaws - I'm a little surprised it ran at all. Particularly if you have any groups which themselves have a group as a member, the script should just error and quit, as far as I can see. Does it make new "groups" for each of your categories, by the way? It's supposed to do that.
